Chambers of silence, doors left unopened for decades, brought to life, renewed, offered for our culinary pleasures.
As not only the stomach must eat, but the heart as well. As not only the feet must travel, but the eye as well.
Noblesse Oblige is an ode that should not be literally translated. It is an enchanted journey between the walls of our aristocratic past & history.
The Menu
“I have imagined this menu as a culinary Italian one-day journey, starting with the holy cappuccino served for breakfast and followed by a 5 o’clock “aperitivo”. The 3rd course is a story of the transhumance of ingredients, of the small farmers and the fishermen that supplied the markets. The 4th course represents a classic dish from the North of Italy. The dessert makes a refreshing finale, like a summer holiday on a southern beach.”

1. The most remarkable reference in your professional background as a Cook?
The dinner I have prepared for Gualtiero Marchesi, considered to be the founder of modern Italian cuisine, when he was honoured with the Order of Merit of the Italian Republic.
2. Your culinary approach in 3 words:
Tradition, taste and authenticity.
3. The taste of your childhood:
Strawberry mousse.
4. Assuming you were invited to create the menu for the festive dinner of the Nobel Prize Gala, what main course would you propose?
Anatra multa con insalata di finocchi e arancia // Plenty of duck with fennel & oranges salad.
5. What is the story of the menu created for the WeDine dinner-event?
